Grade A Amber: Amber is one of the lighter grades of Maple Syrup but not the lightest. It's probably the grade you've had the most of, the one you'll find at restaurants that serve real maple syrup.
Grade A Dark (Grade B): Dark, formally known as Grade B, is the darkest of the grades. It has a strong, robust maple flavor.

Storage Instructions Maple syrup will keep indefinitely unopened, although the flavor may change so it's best to keep in a cool, dark place for long term storage. Once opened it's best stored in the refrigerator. It may also be stored in the freezer (in the bottle, maple syrup doesn't freeze!), where it will last indefinitely.
